Beef Fillet Steak

With vegetable stack

Preparation time: 5 minutes | Cooking time: 15 minutes | Serves: 2

Ingredients

 

2 Silver Fern Farms fillet steaks

Freshly ground black pepper

1 Tbsp olive oil

2 large tomatoes, sliced thickly

1 eggplant, sliced

1 large red onion, sliced

4 large mushrooms

20 green beans

2 Tbsp olive oil

 

 

Cooking Directions

 

Heat a heavy grill pan and sear the steak for 2 minutes each side. Transfer to a pre-heated oven (180°C) and bake for 4 minutes. Remove from the oven and allow the steak to rest.

Heat olive oil in a pan and grill the sliced eggplant, onion and mushrooms for 2-3 minutes each side. Add the tomatoes and beans and cook for a further 2 minutes.

Season with pepper and layer vegetables on top of each other to form a stack. Season with salsa verde or basil pesto.
