Lamb stir-fry

with peanut and lime

 Lamb-stir-fry-with-peanut

Ingredients

 

1 pack of Silver Fern Farms’ lamb stir-fry

3 limes (zest from 1, juice from 3)

½ red chilli, finely chopped

2 tsp brown sugar

½ tsp asian fish sauce

½ tsp tamari or light soy sauce

Stir-fry vegetables

½ cup roasted peanuts

1 cup fresh coriander leaves

½ cup mint leaves

 

 

Cooking Directions

 

Mix together lime juice, chilli, sugar, fish sauce and tamari. Marinate the lamb in this mixture for 15 minutes.

Heat a frying pan or wok and cook the lamb for 2-3minutes, remove and set aside to rest. In a separate pan stir-fry the veges and add in roasted peanuts.

Add the cooked lamb and toss to combine.

Garnish with coriander and mint leaves. Serve with rice or noodles.
